Gillian’s Sorta Kinda Healthy Nacho Salad

If you’re looking for something fast and filling, that’s healthy and won’t break the bank, I discovered this great meal choice! I personally CAN’T STAND salads. But this one in particular doesn’t feel like it’s a salad. Especially when you top it off with nachos.
All you need are left over veggies of any kind, and a couple of chicken breasts in the fridge ready to go. I just cook a couple up every few nights and have shredded chicken in a container ready to go all the time to toss into meals and salads as needed. If you’re vegetarian, smoked tofu goes amazing with this salad too.
